    MORE ... on Eggs & Tomatoes

    Yesterday I had lunch with friends which included a variation of Eggs & Tomatoes. The seasoning used was salt and garlic (no sugar). This suggests to me that you could season the Eggs & Tomatoes anyway you wanted. One might be able to create lots of excellent variations of this dish. Let me know how you do it!
